Pouched egg, bacon, avocado & flat bread

One of my all time favourite breakfast recipes. The best thing about this is that you can us it for dinner or tea whatever takes your fancy.

This isn't the healthiest meal or snack but it is a pretty good way to get some brilliant nutrition. The eggs are high in choline which is a vital part of nervous system development and avocados are brilliant for keeping a healthy heart. So I have read somewhere!!

This is a pretty easy recipe and as many others may thing that pouching eggs can be a daunting task. But I myself believe I have found a simple and easy way to create a perfect pouched egg with you can see from my photo. Yes I am very chuffed with my pouched eggs... and believe me it was sooo easy to do!
Ingredients: For one serving
1 medium or large egg (Free range is best)
1 avocado (Soft enough to mash or slice)
2 slices of bacon (plain or smoked)
Flat bread
Instructions:
To start with blace your bacon strips under the grill and leave on a medium heat.
Boil water in a pan with a pinch of salt. When the water is bubbling not to wildly that is when you want to start pouching your egg.
Using a small bowl or cup crack the egg into one and standing over the boiling pan using a spoon stir the water in a circular motion and with the water spinning round carefully pour the egg into the middle and let it spin around with the water. Leave the egg to cook for about 2 minutes and now and again stir the water - this will cook/pouch the egg perfectly.
While the egg is pouching cut the avocado in half and empty into a bowl and mash up to create a sort of paste... not smooth but enough to create a spread like consistency.
Toast your flat bread and cover with the avocado and remove your bacon from the grill and place on top. I prefer my bacon crispy but cook to your own liking.
Now its been long enough for the egg to cook, remove the egg from the pan using a metal spoon. Allow the water to run away from the egg and then carefully lay on top of the bacon.
Finally add some pepper and enjoy!!
